[English text below, provided by the architect] Ditugaskan untuk meredefinisi Le Du dalam rangka perayaannya sebagai Best Restaurant in Asia sekaligus tonggak 10 tahun berdirinya, pendekatan desain diarahkan untuk selaras dengan kreasi kuliner Chef Ton yang luar biasa. Le Du, yang berarti “Musim” dalam bahasa Thai, menjadi representasi perayaan akan keragaman rasa dan warna yang hadir di setiap pergantian musim. Terinspirasi oleh dedikasi Chef Ton dalam membawa kuliner Thailand ke kancah global dengan cara mengolah bahan lokal dan merujuk pada hidangan tradisional, ia kemudian mentransformasikannya menjadi ekspresi kontemporer melalui teknik memasak dan penyajian yang inovatif. Etos desain pun diselaraskan dengan perspektif kuliner yang visioner ini.

Tantangan ruang berupa plafon rendah dengan pola balok tidak beraturan tidak disiasati dengan cara konvensional, yakni menutupinya. Sebaliknya, ketidakteraturan ini justru dirangkul, menghadirkan koneksi tak terduga dengan pola pematang sawah Thailand—referensi penting yang menjadi titik awal perancangan.
Inti dari desain restoran ini adalah instalasi plafon yang dirancang secara site-specific, menafsirkan keindahan sawah Thailand dalam berbagai musim. Instalasi tersebut terdiri dari ribuan tabung kaca berisi bumbu dan biji khas Thailand yang dikurasi, digantung membentuk lengkung, serta terintegrasi dengan elemen pencahayaan tabung kaca. Di sini, bumbu-bumbu Thailand diperlakukan sebagai representasi visual dari pergantian musim dalam lanskap persawahan.


Setiap musim diterjemahkan dengan cermat: merah menyala cabai kering melambangkan musim panas; hijau pandan, daun jeruk purut, dan kacang hijau menggambarkan musim hujan; sementara nuansa keemasan kedelai, beras, dan jintan menghadirkan esensi musim dingin di sawah. Perjalanan ruang para tamu pun disusun mengikuti siklus bercocok tanam—dimulai dari masa penanaman di musim panas saat memasuki ruang, berlanjut ke musim hujan, hingga panen di musim dingin saat mereka bergerak menuju area utama ruang makan.
Pada akhirnya, instalasi ini mentransformasikan keindahan intrinsik sawah Thailand lintas musim menjadi pengalaman visual sekaligus ruang yang imersif, menghadirkan persilangan multisensori antara desain dan gastronomi. Desain Le Du merepresentasikan kolaborasi kreatif dengan Chef Ton—memanfaatkan material lokal, berangkat dari narasi budaya, lalu menafsirkannya kembali melalui teknik kontemporer.

[Text provided by the architect] Commissioned to redefine Le Du in honor of its recognition as the Best Restaurant in Asia and the milestone of its 10th anniversary, the design approach seeks harmony with Chef Ton’s exceptional culinary creations. Le Du, meaning “Seasons” in Thai, embodies a celebration of the unique tapestry of flavors and colors that unfold with each passing season. Inspired by Chef Ton’s dedication to globalizing and elevating Thai cuisine—seamlessly incorporating local ingredients and drawing inspiration from native dishes—he transforms them into contemporary expressions through inventive culinary and presentation techniques. The design ethos aligns seamlessly with this innovative culinary perspective.

Faced with the challenge of a low ceiling and an irregular beam pattern, the conventional concealment approach was set aside. Instead, the design embraced the irregularity of the beams, drawing an unexpected connection to the berm patterns found in Thai rice fields—a pivotal reference that shaped the project’s inception.
At the heart of the restaurant’s design is a site-specific ceiling installation, meticulously crafted to capture the beauty of Thai rice fields across diverse seasons. The installation comprises thousands of glass tubes filled with curated Thai seasonings and beads, suspended in fluid curves and seamlessly integrated with custom glass tube lighting fixtures. Here, Thai seasonings become a visual representation of the changing seasons within the rice plantation landscape.


Each season is represented thoughtfully: the fiery red of dried chili embodies the hot season; the verdant green of pandan leaves, kaffir lime leaves, and green beans mirrors the rainy season; while the golden hues of soybeans, golden rice, and caraway capture the essence of winter in the rice fields. Guests’ culinary journey through the space parallels the rice farming cycle—transitioning from the seeding period of the hot season at the entrance, to the rainy season, and finally to the harvest of winter as they move deeper into the dining area.
Ultimately, this installation transforms the intrinsic beauty of Thai rice fields across seasons into a visually and experientially captivating feature, creating a multisensory intersection of design and gastronomy. Le Du’s design embodies a collaborative creative approach with Chef Ton—utilizing Thai materials, drawing inspiration from local narratives, and redefining them through contemporary techniques.
